Breakfast: Skillet Egg and Brown Rice + Microwaved Yam
It was a pretty good breakfast! Very flavorful... that must've been because of the olive oil and salt. I just threw an egg and left over brown rice in the omelet pan and it was ready in no time. It was a big yam so I brought the rest of it to work to snack on throughout the day.
Lunch: Peruvian stir fried spaghetti + Chicken Soup
It was a coworker's birthday, so we went out for lunch. It was good, I finished it all... and I have no idea where that dish rates on the health scale. (It'd be sad if I paid for a lunch that I didn't find tasty. )
Dinner: Steamed Shitaki Mushrooms with Thyme, Bok-Choy+Chinese Sausage fried brown rice
It was a good dinner! Once more I just threw stuff into the pot and stirred. One pot wonders, you know? But a few hours after dinner, both my husband and I were doubled over with gas. I wonder if there was too much fiber in our meal? Or maybe it was the expired, dried apricots we ate before dinner? All I know is that I was in pain for 2 hours. It made taking care of the baby difficult.
